Intermediate Level Workshop
DESCRIPTION:
In this 3 hour hands-on workshop you will learn the intricacies of making a well- structured loaf of sourdough bread, with beautiful crust and open crumb. By learning the techniques used by artisan bakers, you’ll get peak performance from your starter and will learn how to prepare it for traditional rustic loaves, sourdough pizza, sourdough bagels and much more.
I will bring two staggered doughs for each student. One dough you will shape and proof and we will bake it at the end of the class. You will take that hot and fresh loaf home with you. The second dough you will take home for further shaping, proofing and baking the next day. You will learn how to bake sourdough bread at home using Dutch oven, cast iron or ceramic dish. Baking delicious and nutritious bread couldn’t be any easier way that this. We will have fun!
This is a small class with limited enrollment to ensure that I am able to work closely with each of you.

WHAT YOU'LL LEARN:
- How to fully activate your starter before a bake.
- Know what an autolyse is and why it is used in bread baking.
- How to manage the dough through all the steps of bulk fermentation.
- Learn methods to build strength and structure into your dough (lamination, stretch and fold, coil fold)
- Shape the dough at the end of bulk fermentation.
- Score the dough.
- Have an easy method of baking with steam in your own home oven.
- You will see how to bake, slice and eat a freshly baked slice of bread. (I will give you the best and healthiest way to enjoy sourdough bread at home and amaze your family and friends).
REQUIREMENTS:
- Passion for discovering how to bake hearth loaves in your own home oven.
- Desire to learn health benefits of Sourdough bread.
- Willingness to get messy and covered with dough because it is too much fun . 🙂
